Introduction

I found this recipe, an adaptation of another one, on the Angry Chicken Blog. I make these all the time - they are great frozen and reheated in the toaster. Number of Servings: 8

Ingredients

    Can of drained & rinsed black beans (or a little less than 2 cups dried beans cooked)

    Can of diced tomatoes, well drained

    cup of cilantro or parsley

    1 tsp gr cumin

    1 clove garlic

    2 green onions

    2/3 cu shredded carrots (or about 2 carrots)

    1 1/3 to 1 3/4 cu rolled oats (try it out to see which texture you like better)

Directions

Chop & grate ingredients into pieces. Throw them in the food processor and pulse until combined.

Make 8 patties and bake on a baking sheet covered with parchment paper on 400 for 20 minutes. Carefully turn patties and bake for 15 more minutes.

Cool & freeze.

Serving Size: Makes 8 patties.
