Number of Servings: 10

Ingredients

    2 cups dried lentils
    5 cups water
    5 cups beef, chicken or vegetable bouillon (as prepared)
    2 cups chopped carrots
    5 stalks chopped celery
    4 small chopped potatoes
    1 onion, chopped
    2 T Olive Oil
    Salt/pepper to taste
    Red Wine Vinegar
    2 bay leaves

Directions

Combine prepared bouillon, water, lentils, vegetables, olive oil, and bayleaf on stove or in crockpot.

On stove, simmer for an hour or more. Soup tastes best after lentils have started to break down.

In crockpot, cook on high for 3-4 hours or low for 5-6 hours.

Pour a tsp or two of vinegar over soup before serving. Tastes great with hot sauce too.
