Introduction

I got this recipe from Whole Foods. It is very refreshing and would actually make a good smoothie, with a dolop of whip cream, I know I'm bad! I know this is a cold soup, but I put this in my pitcher so I can pour in a glass and gobble up all the nutrients!! 106% vitamin C and lots of potassium! I got this recipe from Whole Foods. Ingredients

Traditionally made with tomatoes, this refreshing twist on an old favorite can be served as a dessert soup at the end of a hearty meal or as part of a brunch buffet.

    Ingredients
    2 cups (1-inch cubes) cantaloupe
2 cups (1-inch cubes) seedless watermelon
1 cucumber, peeled, seeded and chopped
1 pound organic strawberries, hulled, divided
1 tablespoon fresh lime juice - I used 1 whole lime

    Method

Directions

Place cantaloupe, watermelon, cucumber, half of strawberries, and lime juice in a food processor and blend until puréed. Chop remaining strawberries and stir into the soup. Refrigerate until chilled.

If you need this soon, use frozen strawberries in the processor and use fresh for remaining.
