Introduction

My spin on the very delicious, but very expensive VitaTop Muffins. They give you 4 in a box for around $10. This recipe is for 24 and it's roughly about $3 for all 24 servings! Ingredients

    1 Whole Pouch of Betty Crocker Oatmeal Cookie Mix (Do NOT prepare as directed, we're using the dry mix as a base)

    1/4cup diced Dried Apricots (6 apricots)

    1/2tsp Cinnamon, ground

    2tbsp Flaxseed, ground

    1/4cup Nestle Tollhouse Mini Chocolate Chips

    2 Egg whites

    1cup of Banana, mashed

Directions

1.) Preheat oven to 350 if using dark/non-stick cupcake baking tray. Spray tray with non-stick Pam Baking Spray.
2.) Mix together all the dry ingredients.
3.) Add in wet ingredients and mix really well.
4.) Fill the cupcake tray about 1/3 of the way-it's about 2 level tablespoons each.
5.) Bake about 25 mins, maybe shorter/longer, depends on the oven.


Serving Size: Makes 24 muffin "tops" or thick cookie muffins
