Introduction

This recipe is very flexible. I just basically put things together according to our family's taste. Adjust veggies, spices, etc. to your liking. You may opt to thicken the sauce at the end of cooking with a cornstarch mixture. Black beans and corn would be a nice addition. This recipe is very flexible. Ingredients

    *3lbs boneless skinless chicken breast (cut up)
    *2 bell peppers (your choice)
    1C chopped onion
    6 cloves garlic (to taste)
    1 can 98% fat free crm chicken soup
    1 cup chicken broth
    1 can fire roasted tomatoes
    4 oz white wine
    4 oz Salsa Verde medium
    1T cumin
    1T oregano
    bunch parsley
    1/4 C chopped fresh cilantro
    2 chipotle peppers in adobo sauce chopped (to taste)
    dash salt (to taste)
    dash lime juice (serving time) (opt)
    2% Mexican shredded cheese (opt)
    sliced avocado (opt)

Directions

Cut up chicken and vegetables. Mix liquid ingredients and spices in crockpot. Add chicken and vegetables. Cook 6 hrs on low. Can vary spice amts, choice of vegetables, etc. Serving suggestion: Sprinkle with a bit of lime juice, serve over brown rice, sprinkle with cheese and add some sliced avocado. Thicken with cornstarch mixture at end of cooking if desired.
