Introduction

Number of Servings: 6

Ingredients

    3 tbsp olive oil
    1/2 teaspoon minced garlic
    1 pound raw shrimp - peeled & deveined
    1/4 cup chopped green onions
    1/2 cup white wine (or vegetable broth)
    2/3 cup fat free half & half (or heavy whipping cream)
    2 tbsp fresh basil, chopped
    7oz grape tomotoes, diced
    8oz fresh mushrooms, sliced
    1 green bell pepper, diced
    1/4 alfredo sauce (not needed if using heavy cream)

    Served with any pasta or hard rolls

Directions

-Heat Olive Oil in a pan.
-Add chopped onions, garlic & shrimp
-Cook until shrimp are no longer translucent (about 5 minutes)
-Set shrimp mixture aside
-Sautee green peppers and mushrooms in wine, basil and seasonings until tender
-add half & half and simmer for about 15 minutes
-add tomatoes and cook until sauce thickens (about 10 minutes)
-add alfredo sauce to help mixture thicken
-combine shrimp mixture with sauce and mix well
-add any additional spices, salt and pepper at this time - I suggest red pepper or cajun seasonings to spice it up a bit
-prepare pasta as directed
-serve with fresh parmesean or asiago cheese
