Introduction

These muffins are made with bread soaked in egg mixture. You can also use whatever you have in your pantry for the toppings.

This will make for a good breakfast when you're running late in the morning.

Number of Servings: 6

Ingredients

    4 eggs
    1/2 cup non fat milk
    2 tbsp grated parmesan cheese
    5 slices wheat bread
    5 tbsp black pepper
    1 slice of ham
    6 basil leaves
    6 tbsp grated cheese

Directions

Preheat oven.

Beat eggs. Add milk, pepper, and parmesan cheese.
Remove crusts from bread. Cut each slice into 4. Soak in egg mixture.
Finely chop the basil leaves and ham. Mix together and set aside.

Put some liners in a 6-cup muffin pan.
Stack the pieces of bread into each muffin cup and fill almost to the brim.
Top each muffin with ham and basil.
Sprinkle some cheese.

Pop in the oven and bake for 10-20 minutes at 200 degrees.

Let cool and enjoy or store in an airtight container in the fridge.
To reheat, pop this in an oven toaster for a few minutes (just enough to warm it through). Perhaps the microwave would work too but you have to eat it right away. I find that if you heat it in the microwave and not eat it right away, it can get tough.
