Introduction

These taste like cheese blintzes! The pancakes are so fluffy, tasty and are hubby's new favorite! Especially good with jam and/or fresh berries. Could also top with bananas and peanut butter. This recipe is great. I did not want high fat like egg yokes or flour. N0 applesauce so I grated half an apple Added cinnamon and instead of splenda I used approx. 1-2 tsp of honey which make them a little crispy around the edges. Froze them for snacks. Thanks for a great recipe! - 5/25/14
