Ingredients

    pork loin whole, 16 oz
    *artichoke heart (in water), 1 can
    Kalamata, Green Olives, pitted, 8 oz
    Lemon Peel, 1 tbsp
    *Lemon Juice, 1 wedge yields
    Salt, .25 tsp
    *freshly ground black pepper, 0.25 tsp
    Feta Cheese, .5 cup, crumbled

Directions

Slice pork lengthwise, open,and place between wax paper. Pound with meat mallet to flatten.
Mix other ingredients in a food processor. Spread mixture onto pork and roll, Use toothpicks or butcher's string to keep roll closed.

Bake at 400 degrees 20 minutes

Serving Size: 2 1-inch slics
