Ingredients

    1 cup canned pumpkin
    .5 cup plus 2 T sugar
    .5 cup packed brown sugar
    4 egg whites
    .5 cup milk
    .25 cup plain yogurt
    2 cups flour
    2.5 tsp baking powder
    2 tsp pumpkin pie spice
    .25 tsp salt
    1 pkg (8oz) neufchatel cheese

Directions

Combine pumpkin, half cup sugar, brown sugar, 3 egg whites, milk and yogurt in a bowl. Add baking powder, pie spice, salt and flour; stir just until moistened. In separate bowl, beat neufchatel cheese, 1 egg white and 2 T sugar until well blended.

Spoon half the pumpkin batter into loaf pan, spread cheese filling evenly over the batter, and top with remaining pumpkin batter.

Bake at 350 for 60-65 minutes, until toothpick comes out clean. Cool in pan for 10 minutes, then on wire rack until completely cool.
