Introduction

Ingredients

1/4 cup of brown rice (I used Trader Joe's Brown Rice Medley)
1 tsp. Olive Oil
1/4 cup onion diced
1 tsp of garlic minced
1/4 cup carrot diced small
1/4 cup bell pepper diced
1 small summer squash diced
1 small zucchini diced
1 tsp. of lemon juice or to taste
1 cup of fresh spinach
Dashes of the following:
Black Pepper
Oregano
Parsley
Note: The lemon add a nice zesty zip to the meal.
Directions
Cook Rice according to directions - for extra flavor cook in vegetable or chicken broth
Meanwhile
In a skillet, add olive oil, garlic and onion, saute until tender (3 minutes), Add the carrots and saute until soft (3 minutes). Add the rest of vegetables, except for the spinach. Add lemon juice . Cook until tender (about 3 minutes). Add Pepper and seasonings to taste. Top with spinach and cook until wilted (about 1 minute).
Then add your cooked rice.
makes approx. 2 1/2 cups total - Good for one single meal or two side dishes
