Introduction

I altered this recipe from the Gajar Matar recipe I found in 'The Food of India: A Journey for Food Lovers'. Peas=Matar but I use whatever vegetables I'm in the mood for. Ingredients

    * Onions, raw, 1 medium (2-1/2" dia) roughly chopped
    * Garlic, 1 clove roughly chopped
    * Ginger Root, 5 slices (1" dia) chopped
    * Olive Oil, 0.5C
    * *Cumin seed, 1 tsp
    * Turmeric, ground, 1.5 tsp
    * Mixed Vegetables, frozen, 1 pack (2-1/2 lb)
    * *Cumin, ground Spice, 1 tsp
    * Salt, 3 tsp
    * Chili powder, .25 tsp
    * *Garam Masala, 0.5 tsp

Directions

Put the onion, garlic & ginger in a food processor & blend until finely chopped or chop them together with a knife & mix together.

Heat the oil in a pan, then add the onion mixture & stir over high heat for 2 min, or until softened. Reduce the heat to medium & add the cumin seeds & turmeric.
When the seeds are sizzling, add any fresh vegetables (not tomatoes) you are using & stir for 2 min.
Add the ground cumin & coriander & fry for 2 min.
Stir in starchy or frozen vegetables (tomatoes) you are using, then the salt, & chili powder. Add 2Tbsp water for fresh veg, 4Tbsp for frozen veg.
Reduce the heat to a simmer, partially cover the pan. Simmer for 15min or until the vegetables are tender.
Stir in the garam masala.
