Introduction

Delicious gluten and dairy free pancakes. Use as flatbread. GEMS flour was created by Wendy Turnbull in her book gems of gluten free baking. You may substitute 1/4 cup brown rice flour and 1/4 cup amaranth flour for the GEMS flour mix. Delicious gluten and dairy free pancakes. Use as flatbread. Ingredients

    1/2 tsp salt
    2 1/2 tsp. baking powder
    1 c buckwheat flour
    1/2 cup GEMS flour mix
    1/2 c Rice Dream Original Rice Milk (or regular milk)
    3/4 c water
    1 tbsp sugar
    2 tbsp extra virgin olive oil
    2 large eggs

Directions

Combine eggs, milk, water and oil.
Stir briskly with a whisk or egg beater until mixture is frothy.
Add dry ingredients and mix thoroughly.
Drop by serving spoon onto non stick griddle.
Cook on griddle until both sides are lightly browned, approximately 5 minutes a side.
Makes 14 pancakes.

    This looks like a good recipe. Is the amaranth missing from the ingredients list? - 11/23/08

    Sorry. There should be 1/2 cup of amaranth flour. I sometimes make it without the amaranth and then have 1 1/2 cups of buckwheat flour.

    Very good. I did not have GEMS flour. I used 1/4 cup amaranth flour and 1/$ cup brown rice flour. Almond. milk unsweetened Honey 2 tblsp because I like sweet pancakes. I think my baking soda was very old. My pancakes were pretty flat. Hubby an d I had a very nice breakfast! Thanks! chris - 9/7/14
