Introduction

I used a Hamburger Helper recipe, but added more veggies than meat. This not only increases the serving size, but adds vitamins and healthy nutrients! Ingredients

    1 box Hamburger Helper Cheesy Quesadilla
    1 lb. ground turkey
    1 red bell pepper, chopped
    1 medium onion, chopped
    6 green onions, chopped
    1/2 cup mushrooms, chopped
    2 carrots, shredded
    1/4 cup taco sauce
    8 oz. white corn tortilla chips
    2 cups lettuce, shredded
    1/2 cup cheddar cheese, shredded

Directions

Prepare vegetables as instructed. Brown turkey in large saucepan. Add red pepper, onions, mushrooms and carrots. Prepare Hamburger Helper mix as directed. Bring to boil, and reduce heat. Cover and simmer for 20 minutes, or until rice is cooked. Allow mix to sit for five minutes to thicken, and add taco sauce. Serve mix atop 1 oz. tortilla chips and 1/4 cup shredded lettuce. Top with 2 tbsp. shredded cheese.

Serving Size: Makes 8 1-cup servings (mix)
