Introduction

Ingredients

    1 pound red potatoes, quartered
    ¼ cup diced onion
    2 tablespoons olive oil
    1 ½ tablespoons honey
    1 teaspoon dry mustard
    1 tsp salt
    1 tsp ground black pepper

Directions

Preheat oven to 375 F. Lightly coat a 9x13” inch baking dish with non-stick cooking spray.
Place potatoes in a single layer in prepared dish, top with onion.
In a small bowl, combine oil, honey, mustard, and salt and pepper.
Drizzle mixture over potatoes and onion..
Bake 35 minutes, stirring halfway through the cooking time.
Turn broiler to High, broil 5 minutes.
Serve hot.

    This was great. I served them along with Southwestern Grilled Pork Tenderloin (also a SparkRecipe). The slight sweetness was a perfect compliment to the spicy pork.I like the idea of using hash browns. I'll try that next time. - 4/26/08

    To bake them faster I microwave them and then bake at 425 -they are a favorite. Thank You for a wonderful recipe. - 11/17/14

    Very Good
    Very very tasty! I will definitely make this again. I will cut back on the pepper though - little too "spicy" for me because of the pepper. - 7/7/10
