Introduction

I wanted to create a Granola that would stick with me so in went the peanut butter. I use Agave as the sweetener because of where is falls on the glycemic index. No big blood sugar drop. I added in the flax because it is AWESOME for us. You can't even tell it is there. I wanted to create a Granola that would stick with me so in went the peanut butter. Ingredients

    100% Whole Grain rolled oats (oldfashioned), 4 cup
    Agave Nectar - Raw, 1/2 cup
    Vanilla Extract, 1 tsp
    Peanut Butter, smooth style, 1/2 cup
    Pecans, 1/4 cup, chopped
    Cranberries, dried, sweetened (craisins), 1/3 cup
    Flax Seed Meal (ground flax), 4 tbsp
    Cinnamon, ground 1/8 tsp
    Nutmeg - 1 or 2 dashes
    Sunflower Seeds, with salt added, 1/4 cup

Directions

Spray Cookie Sheet. Heat Honey, Agave and Peanut butter in Microwave for 1 minute. Stir well. Add Vanilla, Cinnamon, Nutmeg and Flax. Stir well. Pour over Oatmeal then pour out on cookie sheet. Bake 325 for 30mins....stirring every 10 mins. Stir in pecans and cranberries after cooked. Stir periodically until cool. Store in airtight container. Enjoy!
