Lightened up Betty Crocker version, no boxed mix Lightened up Betty Crocker version, no boxed mix
Number of Servings: 12


    1 cup Silk
    2 T oil
    2 T unsweetened applesauce
    1 t vanilla (or other extract)
    1/2 cup Splenda
    2 cups flour
    3 t baking powder
    1/2 t salt
    3/4 cup fresh or frozen cranberries, chopped


Mix wet and dry separately, stir together until just blended. Batter will be lumpy. Fold in cranberries. Spoon into 12 silicone muffins cups (or spray the other kind). Bake 20 minutes at 400 degrees.
