Ingredients

    1 cup black beans, rinsed and drained
    2 tbs light olive oil
    .5 cup frozen spinach, thawed and squeezed dry
    .25 cup applesause
    2 eggs
    1 egg yolk
    .75 cups sugar
    3 tbs unsweetened cocoa
    1.5 tbs instant espresso powder
    ------
    3 oz. chopped bittersweet chocolate
    2 tbs unsalted butter
    ------
    2 tsp pure vanilla extract
    .5 tsp salt
    ------
    .5 cup flour (half whole wheat if desired)
    .33 cup mini chocolate chips
    ------
    .33 cup chopped pecans

Directions

Preheat oven to 350 degrees Fahrenheit.
Mix black beans, olive oil, spinach, applesauce, eggs, egg yolk, sugar, unsweetened cocoa, and espresso powder in a food processor, pulse for a minute or until smooth.
Microwave bittersweet chocolate and butter in a glass bowl, stirring every 30 seconds or until smooth; cool for 5 minutes.
Add chocolate, vanilla extract, and salt to processor; pulse to blend. Transfer to a bowl. Stir in flour and mini chocolate chips.
Pour into an oiled 9x13 inch pan; top with chopped pecans.
Bake for 25-30 minutes; cool for 15 minutes.
