Ingredients

1 tsp Grapeseed Oil
1 leek 50gm chopped fine
Onion 50gm chopped fine
2 Tbs water
Potato 60gm diced
200ml 2% milk
200ml vegetable stock
1 bay leaf
250gm smoked haddock cut into bite size chunks
Boiling water as needed
Directions
Heat the oil in a pot and add the leek and onion. Heat gently for about 5 minutes and then add a couple of tablespoons of water. Continue heating for another five minutes,
Add the stock, milk, bay leaf and potatoes.
Simmer for about 10 minutes or until the potatoes are cooked.
Add the fish and cook for about 3 minutes or until the fish flakes easily.
If the soup is too thick, add boiling water as desired,
Variation: Add sweet corn and/or peas, and be sure to add the calories
Serve and enjoy!
Serving Size: Makes 2 generous 1 cup portions
