Introduction

My family love these low budget, nutritious Salmon Cakes. I am sure you could add all sorts of shredded veggies to them, this was my first try. My family love these low budget, nutritious Salmon Cakes. I am sure you could add all sorts of shredded veggies to them, this was my first try.
Number of Servings: 16

Ingredients

    4 Cans of Salmon
    3 Large Sweet Potatoes
    1 Cup of Bread Crumbs
    8 tbsp Parmesan
    1 cup chopped onion
    1/4 cup chopped celery
    2 tbsp Olive oil

Directions

Cook the sweet potatoes until soft in their skins in the oven.
Allow to cool.
Blend all ingredients except olive oil in a bowl.
Pour oil in to skillet and heat over medium heat.
Shape the mixture into patties and fry on each side approximately 5 minutes or until they hold their shape.



Serving Size: Makes 16 patties
