Introduction

I called them al fresco because I plan to eat them outside on the deck with a nice cup of italian roast coffee, while I read my daily spark emails.

The eggs are always a concern, with high cholesterol and sodium, so you can easily bypass that with egg beaters or just egg whites. Or even cut it down to just one egg.

Ingredients

    1 corn tortilla (I like Guerrero)
    2 large eggs
    1 small tomato (sliced)
    chopped green onions to top
    2-3 Tbsp your favorite salsa
    1/4 cup 1% cottage cheese

Directions

Toss the tortilla in a toaster oven and keep an eye on it. If no toaster oven heat last in the pan.

Cook eggs in small frying pan to your liking(sunnyside up, over-easy, poached). I tend to cook mine over-medium.
After you flip the eggs add the tomato slices and green onions to the pan, flip when/if necessary. Once the eggs are finished everything else should be. With tortilla on plate, paint on your salsa, add your eggs, cover with tomato slices and green onions, top with cottage cheese. Salt and pepper to taste.
