Ingredients

1 and 1/2 pounds boneless skinless chicken breast cut into bite size pieces
2 green bell peppers cut into bite size pieces
1- 4oz can mushroom slices
1 tablespoon salt
1 tablespoon pepper
1 bunch green onions diced
1 tbsp minced garlic
2 cups uncooked basmati rice
2 tbsp oil
1 can Swanson 99% fat free chicken broth
Directions
1. Cook chicken with garlic until chicken is no longer pink.
2. Cut bell peppers into 3rds and add to chicken
3. Dice green onions and add to chicken
4. Add mushrooms, chicken broth, salt and pepper.
5. Cook for 1/2 hour over low heat.
6. Cook rice in rice cooker while chicken is cooking.
Serve in a bowl one cup cooked rice and 3/4 cup of chicken with the broth over the rice.
