Milk, 1%, .66 cup
Cottage Cheese, 2% Milkfat, .33 cup (not packed)
Coconut Oil, 2 1tsp
*Zuchinni, 1 large 323g, 1 serving
Asparagus, fresh, 8 spear, medium (5-1/4" to 7" long)
Onions, raw, .5 cup, chopped
*Tyson Hickory Bacon - Precooked, 2 serving
Neufchatel Cheese, 2 oz
Fresh Chives, 2 tbsp chopped
Dill weed, fresh, 2 sprigs
Salt & pepper to taste (not included in nutrition totals)
Directions
Put eggs, milk and cottage cheese in a food processor and blend until thoroughly combined.
Heat oil in large skillet and cook asparagus, onion and zuchinni until crisp tender. Cook bacon in microwave for 1 minute.
Heat oven to 350 and spray a 9 x 13 casserole dish. Spread vegetable mixture on bottom, top with crumbled bacon. Pour over egg mixture and dot with neufchatel cheese. Sprinkle herbs on top. Bake at 350 for 15-20 minutes until puffed and corners are lightly browned.
Divide pan into 8 servings.
