Introduction

Works as a beautiful appetizer to share between two or as a light entree! You could could also serve with tortilla chips for people to scoop and snack or place over a salad or bed of rice for a fuller entree! Ingredients

    - 75 grams cooked shrimp
    - 3 tbsp chopped red onion
    - 1 tbsp lime juice
    - fresh or dried cilantro leaves to taste
    - 75 grams of mango, peeled, pitted and chopped
    - 3 cherry tomatoes, quartered
    - 1/8 jalapeno pepper, finely chopped for a little bit of spice
    - salt to taste

Directions

Chop shrimp into 1/2-inch pieces and transfer to a large bowl. Add onion, lime juice, cilantro, mango, tomato, jalapeņo and salt and toss well. Cover and chill until ready to use!

Serving Size: makes about two cups to be split into appetizer size or blended together for an entree
