Introduction
I came up with these a few years ago, they are perfect for a grab-and-go breakfast or snack. Apple-carrot-raisin-pecan-walnut-flax-whole wheat-low sugar-low fat-super fibrous bran muffins! Ingredients

MIX TOGETHER:
1 cup whole wheat flour
1/2 cup all-purpose flour
3/4 cup ground flax seed
3/4 cup oat bran
1/3 cup brown sugar
2/3 cup Splenda
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 TBSP ground cinnamon
THEN ADD:
1 cup skim milk
2 eggs, beaten
1 teaspoon vanilla extract
2 tablespoons vegetable oil
LET SET FOR 10 MIN- THEN MIX IN:
2 cups shredded carrots
2 apples, cut into small pieces
1/2 cup dried fruit (you choose)
1 cup chopped nuts (you choose)
Directions
See ingredients list, the instructions are in there. Scoop batter into oiled muffin pans. This should make exactly 24 muffins. Bake for 15-20 minutes at 350 degrees.
