A nice light side salad to go with fish or poultry. A nice light side salad to go with fish or poultry.
Number of Servings: 4


    4 cups baby bok choy, shredded
    2 tbsp pecans
    1/4 cup dried cranberries
    1 green onion, sliced thinly

    2 tbsps olive oil
    1 tbsp red wine vinegar
    1 tsp soy sauce
    2 tsps sugar or sweetener equivalent


Toss the salad ingredients together.

Mix dressing in a screw top jar (shake shake shake). Pour on salad and toss. Yummy!
