Ingredients

Pam cooking spray
1/4 cup plus 1 tbsp unsweetened cocoa powder
1/2 cup Splenda
6 tbsp unsweetened applesauce
1/2 cup liquid egg whites
1/2 cup oat flour
1 tsp Stevia vanilla creme
Orange or pear slices, for garnish (optional)
4 Tbsp fat free cream cheese
1/4 cup Splenda
Directions
Preheat oven to 400°F. Lightly spray cupcake cups or small ramekins with cooking spray.
In a medium bowl, combine cocoa powder and Splenda; whisk in applesauce and liquid egg whites.
Stir in flour and vanilla until flour is combined completely – do not over mix.
Place a small dollop in each cupcake tin, just enough to cover the bottom. Meanwhile, microwave cream cheese for 25 seconds to soften, mix in Splenda.
Drop in a teaspoon of cream cheese mixture to center of cupcake tin. Cover the cream cheese mixture completely with more cocoa mixture.
Bake for 9 minutes. Centers should be soft but sides firm. Invert cups onto serving plates; let stand a few minutes before removing cups. Garnish each cake with fruit slices, if desired, and serve warm.
