Ingredients

    Salad:

    - 50 g Shrimp, prepare in grill pan with water to steam (season with salt & pepper to taste)
    - 1 c Kale, chopped
    - 1/4 Yellow or Red Bell Pepper, cored, seeded and thinly sliced
    - 2 tbsp Red Onion, chopped
    - 2 medium Radishes, chopped
    - 1/2 Orange, peeled and sliced

    Dressing:

    - 1/2 Orange Juice yeilds
    - 1 tbsp Balsamic Vinegar
    - 1/4 teaspoon Dijon Mustard
    - Pepper to taste

Directions

In a large bowl, combine kale, radishes, orange segments, onion, bell pepper and shrimp.
In a small bowl, whisk together mustard, orange juice, vinegar and pepper. Pour over the kale mixture and toss to coat. EAT UP!

Serving Size: makes one big summer salad!
