Introduction

This is a great refreshing summer beverage which is frozen. This is a great refreshing summer beverage which is frozen.
Number of Servings: 16

Ingredients

    8 cups rhubarb, cut into 1/4 inch pieces
    8 cups water
    2-3 cups sugar (I use 2 as my rhubarb is not overly tart)
    1/2 cup lemon juice
    1 small pkg. strawberry Jello or flavor of your choice
    2 cups vodka

Directions

Cook the first 4 ingredients together over medium heat until tender. Pour mixture into strainer over large bowl and strain out all juice; reserve juice and discard the rhubarb mush.

Add Jello flavor of choice; whisk until Jello is completely dissolved. I allow to cool slightly and then add the vodka.

Place mixture in a rinsed clean ice cream pail and place in freezer. I stir occasionally while in freezer to keep alcohol mixed throughout.

Once frozen, scoop into glass and add 7-up or strawberry soda. Or, as I do, just enjoy without soda.

I am only guessing at the amount of servings as it depends on the size of glass being used.

Serving Size: Makes approximately 16 - 1 cup servings.
