Introduction

This is a quick easy dish to make, and it has lots of great veggies in it. It is a bit spicy, so if you don't like a lot of spice, reduce the amount of ground black pepper that you add. If you like your food REALLY spicy, kick that pepper up a notch! This can serve as a side dish, but if you want to have a simple dinner, it turns into a low call meal that will fill you up. Add some corn bread, and you have a winner! This is a quick easy dish to make, and it has lots of great veggies in it.
