Introduction

I like to use bone-in chicken breasts in the crockpot because they stay moister and more tender than boneless chicken breasts after cooking all day. I like to use bone-in chicken breasts in the crockpot because they stay moister and more tender than boneless chicken breasts after cooking all day.
Number of Servings: 3

Ingredients

    4 medium potatoes, peeled and quartered
    2 large chicken breasts (I use bone-in but I'm sure you could use 3-4 boneless, skinless breasts)
    1/4 cup lemon juice
    3-4 garlic cloves, minced
    1/2 cup fat free chicken stock (I use water mixed with 1 tsp chicken OXO)
    2 teaspoons dried oregano
    1 teaspoon salt (or to taste)
    1/4 teaspoon pepper (or to taste)
    1 teaspoon onion powder
    1 cup chunky cut carrots (optional)

Directions

1. Place potatoes in the bottom of crock pot (top potatoes with carrots, if using).

2. Top with Chicken breasts.

3. Combine the remaining ingredients and pour over the chicken and potatoes.

4. Cook on the low setting for 8-12 hours.

    Unfortunately, I didn't like this recipe at all. The flavor was just off all around. I hate to rate recipes as bad, but this one was just nasty. - 2/20/08
