Ingredients
-
Pasta, cooked, 2 oz
Chicken Breast, no skin, 2 unit (yield from 1 lb ready-to-cook
Cherry Tomatoes, Fresh, 1 Tomato, 8 serving
Spinach, fresh, 2 cup
Hummus, 2 tbsp
Olive Oil, 2 1tsp
Garlic, 1
Directions
Drizzle few drops of olive oil onto a pan, add garlic. Once the garlic has become slightly brown add the two chicken breasts. Brown the chicken and turn it once. Add salt and pepper to taste.
In another pot start boiling water for the pasta and cook the pasta. This recipe calls for short pasta - Fusilli or Penne preferably.
Once the chicken is brown and thoroughly cooked take it out of the pan and put it aside. Add to the same pan where you cooked the chicken few other drops of olive oil and, once the oil is hot, add the quartered 8 cherry tomatoes. Add salt and pepper to taste. Once the tomatoes have released the juice toss the spinach and turning down the heat to a minimum, place a lid so that the spinach will wilt.
Cut the chicken breasts into cubes.
In a bowl work together 2 tablespoons of hummus and one tablespoon of olive oil.
When the pasta is cooked, drain it and add/mix it to the tomatoes/spinach. Add the chicken. Finally add the hummus and toss all the ingredients together.
Enjoy!
