Ingredients

    200g chicken
    1tsp finely chopped lemon grass
    1 tbsp olive oil
    2 cloves of garlic or 1tsp garlic puree
    1 medium onion, diced
    1 medium pepper, deseeded and cut into strips
    1 tbsp soy sauce
    200g mangetout
    200ml coconut milk
    2 tbsp curry paste

Directions

Heat oil over medium heat in large saucepan and add pepper and oil, cook for 3-5 minutes.
Add chicken and cook for 3-5 minutes.
Add lemon grass, mangetout, garlic, soy sauce and curry paste and stir-fry for 3-5 minutes.
Add coconut milk, cover and simmer for 10 minutes.
Serve immediately over rice.
