Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1/2 cup diced onions
    1/2 cup diced green peppers (we generally use orange or skip the peppers and double the onions)
    2 tsp minced garlic
    1 (15.5 oz) can black beans undrained
    1 tsp oregano - preferably Mexican oregano
    1 tbsp white wine
    2 cups cooked white rice (can substitute brown)
    Ground cumin - to taste .25 to .5 tsp
    Season salt - to taste

Directions

Heat oil in saute pan for 2 - 3 minutes over medium high heat.
Add onions and pepper, saute until tender about 8 to 10 minutes. Add garlic and saute a bit longer until garlic starts to release scent and soften.
Ad remaining ingredients except rice and bring to a boil.
Stir in rice, reduce heat to medium-low and simmer 10 minutes.
