Introduction

Ingredients

1/8 c white wine vinegar
1 Tbsp Olive Oil
1 1/2 tsp minced bottled garlic
1 1/2 Tbsp fresh thyme leaves
Kosher Salt
Freshly ground black pepper
1 1/2 lb chicken breasts, cut into cutlets
2-3 Tbsp Vinaigrette (whisk together 1/3c white wine vinegar, 1/4c Dijon, 2 tsp honey, S&P. add 1/2c olive oil. Mix well. Refrigerate)
6 thick slices alder smoked bacon, cooked until crispy and chopped into 1" wide bits
1 head romaine lettuce (about 12 oz) chopped
4 oz horseradish cheddar, cubed.
2 roma tomatoes, seeded, sliced
1 ripe avocado diced
Directions
In a pan, marinate chicken in vinegar, oil, garlic, thyme, 1 tsp salt, 1/2 tsp pepper. Let sit in fridge for 40 min. Rotate every 10 minutes. Grill chicken until cooked, but not dry, and thinly slice.
Combine lettuce with vinaigrette in a large bowl.
Evenly spread lettuce across a large platter. In rows on top of lettuce, arrange bacon, chicken, cheddar, tomato, avocado
