Introduction

I have been eating Ooodles of Noodles and there sauce made me crave a spicy Teriyaki sauce. mmmmm So I am throwing together a quick veggie stir fry. I have been eating Ooodles of Noodles and there sauce made me crave a spicy Teriyaki sauce. mmmmm So I am throwing together a quick veggie stir fry.

Ingredients

    1/2 Tbsp Sesame Oil
    8 oz boneless chicken breast diced up
    5 cups of Asian stir Fry Vegetables (Trader Joes - the mix includes onion, peppers, snap peas, baby corn cobs, bok choy, broccoli, carrots and bamboo shoots)
    2 cups of baby Bok Choy chopped into 1" pieces
    1/4 cup of spicy Teryaki sauce
    2 cups of cooked brown rice (I used Trader Joe's Organic Brown Rice - just microwave for 3 minutes)

    Note: I meant to add water chestnuts but I forgot.


Directions

In a BIG frying pan, heat sesame oil, once warmed add add yourr chicken and cook for about 5 minutes until cooked through. Take your chicken out and put in a bowl. Then add all your veggies. Cook until soft but still crunchy. Add your Teryaki Sauce and chicken and mix together until fully covered and warmed.

Place veggies over rice or noodles.

Enjoy!
