Introduction

I had a cold and wanted chicken soup. I can't just buy chicken soup from the store, so I threw this together with what I had in my fridge. Ingredients

    1 Boneless skinless chicken breast (cooked)
    2-3 Carrots, peeled and chopped
    1 Medium potato, peeled and chopped
    1 Tbls. chopped onion
    1-2 Tsp. chopped garlic
    1 Tbls. gluten-free flour
    1-2 Tbls. butter or margerine (I use Brummel and Brown)
    2 Cups water
    Salt, pepper, oregeno, sage, basil, other spices to taste

Directions

Dice the onions and garlic and saute them on med-high heat in butter in a soup pan. Add the flour and mix to make a paste. Add cold water while stirring until mixed. Add in diced carrot, potato, and cooked chicken. Add spices to taste. Allow to boil until carrots and potatoes are cooked through. Should take 10-15 minutes depending on how small they are cut. Serve with gluten-free crackers or homemade bread.

Serving Size: Makes about 2 cups
