Ingredients

2 Medium Russet Potatoes, diced
10 Slices Kroger Bacon No sugar Added/Lower Sodium
1 1/3 Cups Frozen Chopped Onion
1/2 Cup Liquid Egg Whites
1/2 Cup Egg Substitute
1/2 tsp Ground Sage
1/2 tsp Ground Rosemary, dried
1/2 tsp Dried Thyme
Directions
Wash and dice 2 medium potatoes with skin on or remove if desired. Heat skillet to medium heat and spray with non-stick cooking spray.
Add potatoes and onions to skillet. Stirring ocasionally as you chop the bacon into bite sized pieces. Do not add oil to skillet, the bacon will provide that. When bacon is chopped, add that to skillet. Cook through until potatoes are soft, about 25 minutes, stirring ocasionally to ensure all ingredients cook evenly.
In a separate bowl, mix the egg whites and egg substitute. Set aside.
When the potatoes are cooked through, remove to papertowl lined plate. Spray pan with cooking spray if desired and add egg mixture. Cook through. If desired, use a separate pan for eggs.
Spoon about 4 ounces of potato mixture onto plate and spread evenly. Top with eggs. Serve with your favorite fruit (nutrition for fruit not included).
