This is an Armenian dish - delicious as a main dish served with salad or as a side dish with beef or chicken. I skip the butter and and use olive oil instead, and it's still delicious.

Ingredients

    1 Cup Brown Lentils
    2 Cups Water
    1 tsp salt
    2 Cups Beef Broth (or bouillon from cube)
    1 stick unsalted butter (optional)
    2 medium onions coarsley chopped (optional)
    1/4 tsp black pepper
    4 TBS olive oil (optional)

Directions

1. Rinse lentils, place in saucepan with water and bring to the boil. Lower flame and simmer gently for 10 minutes or until lentils are tender. Add salt last few minutes. Drain lentils.

2. Bring broth to the boil, add cracked wheat (bulgur) and drained lentils. Bring to boil again then simmer, covered, for twenty minutes or until liquid is absorbed. Shut flame.

3. Meanwhile, melt butter** in skillet (** I use olive oil) add onions and saute them until golden brown. Add to pilaf with pepper and mix gently. Taste to adjust seasoning. Serve at once.

Yield 6 or more servings
