Ingredients

    1 cup brown rice, 3 tbsp peanut oil, 1 1/2 cups water, 1 garlic clove crushed, 4 scallions finely chopped, 4 ounces jumbo shrimp peeled, 2 ounces frozen peas 1 egg beaten lightly, 2 ounces lettuce shredded, 2 tbsp. light soy sauce, pinch of superfine sugar, I also throw in pea pods as they are a favorite of mine.

Directions

cook rice with 1 tbsp of oil and water bring to boil stir once and simmer for appox. 15 minutes let stand for 10 minutes after cooking fluff meanwhile heat remaining oil in fry pan stir fry garlic and scallions, add diced chicken shrimp peas pods stir fry for 1-2 minutes add cooked rice stirfry for another 2 minutes pour in beaten egg and stir fry until egg is set, stir in lettuce, soy sauce and sugar.
