Ingredients
-
Marinade:
2 Tbsp. lemon juice
1 cup Kraft Miracle Whip Light Dressing
1 clove garlic, minced
1 Tbsp. fresh oregano
Kebabs:
3 pounds chicken breast, boneless/skinless
2 medium sweet red peppers
2 large sweet orange peppers
2 small red onions
Directions
The morning of the meal (or a few hours ahead for best results):
1) Make the marinade in a bowl, mix well and refrigerate.
2) Cut the meat into cubes so that they will fit on the skewer.
3) Put the meat and marinade into a large Ziplock bag, remove all the air, seal, massage with hands so that the mixture is distributed evenly. Refrigerate for at least 3 hours, flip the bag every hour or so.
2 hours before BBQing:
4) Soak wooden skewers so that they don't burn on the BBQ.
30 minutes before BBQing:
5) Assemble your skewers alternating Meat, peppers and onion.
Spray Pam on your grill so that the kebabs don't stick. Grill over medium heat for 5 minutes on each side or until chicken is done, turning once. You may have to move around if you find your grill has hot spots.
Serving Size: Serves 8 - 2 kebabs each
