Grandmother's RecipeIf you can find small yellow crooked neck squash, those work best. I live outside the South, so I look for the smallest yellow squash I can find.

Ingredients

5 Med Yellow Squash, sliced rings
1 Med Onion, diced
1 Egg, beat
1 Oz. Cheddar Cheese
5 Saltine crackers, crumbled
Directions
Saute onions until clear (4 mins)
Add squash, saute till tender (4 mins)
Sift veggies from pan into 8x8 pyrex
Melt cheese into au jus left in pot
Stir in crackers
Add egg
Quickly pour evenly over veggies
Bake 350 approx 10 mins. until slightly browned
Serving Size: Makes 6 1-Cup Servings
