Introduction

This was really a wonderful QUICK breakfast/afternoon snack that I figured out. Much better than that thing they try to serve you at Starbucks, if I do say so myself ;)
** To make things go a little quicker in the morning, if you are trying to get out the door, separate the eggs and toss the spinach with the garlic the night before. You can have your food done and ready to eat by the time you done making your coffee ;)

Ingredients

    1 tsp. Olive Oil
    1 garlic clove, minced
    1/2 c. fresh baby spinach
    2 egg whites
    Salt & Black Pepper
    1 tbsp part-skim mozzarella, shredded
    1 6-inch corn tortilla
    Dash of cayenne pepper

Directions

Serving Size: 1
1. Saute spinach in OO and garlic about 1 minute
2. Add egg whites, salt, and pepper
3. Heat tortilla on a warm griddle or frying pan.
4. As eggs just set, turn off the heat and sprinkle cheese on top. Cover with a lid while tortilla warms.
Serve & Enjoy!
