Ingredients

    2 14 oz. packages Nasoya Organic Soft Tofu
    Garlic, 9 cloves crushed in press
    1/2 cup plus 1/2 Tbsp Parmesan Cheese
    1/2 cup plus 1/2 Tbsp grated pecorino romano,
    2 1/4 Tbs Olive Oil, Bertolli Evoo
    2 1/4 Tbs Onion powder
    4 tsp Italian Seasoning
    Salt and pepper to taste
    One 8oz. package sliced Mushrooms
    12 oz jar Roasted Red Peppers,
    2lb. frozen Broccoli Florets

Directions

Saute garlic, roasted red peppers, and mushrooms in 1 Tbsp olive oil
In food processor combine cheeses, tofu, remaining olive oil, onion powder, Italian seasoning and process till smooth
Add to garlic, peppers, and mushrooms and slowly heat through
Cook broccoli according to instructions
Serve 1 cup broccoli and 5.8 oz. sauce over fettuccine or other favorite pasta
