    1 lb. Jimmy Dean Spicy Sausage
    1/4 cup chopped green bell pepper
    1/4 cup chopped onion
    6 eggs
    3/4 cup shredded Mexian style cheese
    Salt & Pepper to taste


Cook the sausage in an oven-safe skillet (cast iron works well) over medium high heat breaking sausage up into fine crumbles as it browns. Pour off grease. Mix in diced peppers and onions and cook 2-3 minutes more. Turn off heat. Whisk 6 eggs in a large bowl stir in 1/4 cup of cheese and season with salt and pepper. Pour egg and cheese mixture into skillet with sausage & vegetables. Bake the frittata at 400 for 15-20 min. or until eggs are firm, tossing on the remaining cheese in the last 5 minutes. Serve with Salsa.
