Ingredients

1 lb boneless pork spareribs
1/2 tsp salt
1/4 tsp ground black pepper
2 cups strawberries, halved or quartered
1/4 cup ketchup
1/8 cup cider vinegar
2 cloves garlic, pressed or minced
1/2 tsp rosemary, crushed
Hot pepper sauce - Optional
Fresh Parsley leaves - Optional
Green Tomato wedges - Optional
Directions
1. Trim fat from pork. Sprinkle pork with salt and pepper. Put in crock pot. Add half the strawberries, ketchup, vinegar, garlic, rosemary, and several dashes hot pepper sauce. Cook on low for 4-6 hours. Remove pork from crock pot loosely cover and let stand for 10 minutes.
2. For strawberry BBQ sauce, skim fat from cooking liquid. Return liquid to small pan and bring to boiling. Reduce heat and, simmer, uncovered 8 minutes or until reduced to about 2 cups.
3. Using two forks, shred pork and discard any fat. Stir other half of strawberries into the pork.
4. Serve pork on buns or just plain. Top with additional sauce and parsley. Pass remaining sauce . Serve with green tomato wedges.
