Ingredients

    6 cups cubed turnips
    2 tbsp butter
    2 eggs, beaten
    3 tbsp flour
    1 tbsp Splenda Brown Sugar
    1 tsp baking powder
    1/2 tsp salt
    1/2 tsp pepper
    pinch of nutmeg
    1/2 cup fine bread crumbs
    2 tbsp melted butter

Directions

Cook fresh or frozen turnip until tender. Drain well. Add butter and beaten eggs. Mash until well blended and the consistency of mashed potatoes. Add flour, Splenda brown sugar, baking powder, salt, pepper and the dash of nutmeg. Mix well. Butter a casserole dish and put in turnip mixture. Bake at 375 degrees for 15 minutes.

Combine bread crumbs and remaining 2 tbsp butter. Spread on top of casserole. Bake 10 minutes longer until light brown on top.

Makes 12 servings--1/2 cup each.

This is a great side dish for a holiday meal. Can be made ahead and cooked before serving. Turnips are high in Dietary Fiber, Vitamin C, Vitamin B6, Folate, Calcium, Potassium and Copper.
