Introduction

This is a complete meal. I throw it all in a baking dish together and let it cook. I like to pair this with Hawaiian Sweet Bread, the recipe can get a little spicy so the little bit of sweet from the hawaiian bread is a nice contrast. Ingredients

    1 Chicken Breast, boneless and skinless
    3 large stalks Green Onions (scallions), sliced
    100 grams Portabella Mushrooms, sliced thick
    1 ( 2 1/3" x 4 3/4") Potato
    2 tsp Cajun seasoning (I use "Slap Ya Mama")
    1 tbsp Basil
    1 tbsp parsley
    2 tbsp Extra Virgin Olive Oil (or any type of oil preferred)

Directions

1. Preheat oven to 400˚ - 425˚ F. Peel and dice potato into
medium sized chunks. Take sliced Portabella Mushrooms
and snap into uneven chunks.
2. In a medium bowl combine diced potato; sliced green
onions; and Portabella Mushrooms. Drizzle with Extra
Virgin Olive Oil and toss.
3. In a small bowl combine cajun seasoning; basil and
parsley. Add 1/2 of seasoning mix to potatoes; green
onions and mushrooms, and toss until coated.
4. Season chicken breast with remaining mixture on both
sides and place in a metal baking dish. Layer vegetable
mixture over chicken and level out. Cover baking dish with
foil and place in preheated oven. Bake for 90 min, stirring
once at approximately 60 min (You may stir more if you
find it necessary.) but leaving chicken breast on the
bottom. Remove from oven and enjoy.

Serving Size: Makes a single serving complete meal.
