Number of Servings: 8

Ingredients

    *1 15 ounce can low sodium garbanzo beans, drained and rinsed
    *1 4 ounce jar roasted red peppers
    *3 tbsp lemon juice (may need a little more)
    *1 1/2 tbsp tahini
    *1 clove garlic
    *1/2 tsp ground cumin
    *1 tsp cayenne pepper
    *1 tbsp EV Olive Oil (approximately)

    ***Since I like spicy food, I usually add 1-2 diced jalapeno peppers to the food processor as well!***

Directions

Put all ingredients except EVOO into food processor. Blend until smooth, stopping to scrape the sides a couple times. After ingredients are blended, add the oil slowly through the feed tube while the processor is running. Refrigerate at least 1 hour prior to serving. Keeps in the refrigerator for 3 days.

Makes approximately 2 cups. Serving size is 1/4 cup.
