Introduction

Ingredients

    2 (3.5 oz) Tilapia fillets
    2 T. whole wheat flour
    1 T. light olive oil
    1/3 cup dry white or cooking wine
    2 T. lemon juice
    1 T. drained caprers
    2 T. Smart Balance Light buttery spread
    4 cups fresh baby spinach

Directions

Coat fish lightly with flour and salt & pepper (if desired). Brown over med-high heat in olive oil. Cook 1-2 min. on each side or 'til fish flakes easily. Remove fish from pan; keep warm. Add wine, lemon juice & capers to pan & cook 1 min. Add butter, stirring 'til melted. Remove sauce. Add spinach to pan and saute 1 min. or until wilted. Serve fish over spinach and top with small amount of sauce. Good over rice too!
